Take Two Vegan Chocolate Cake 

Cake Ingredients
• 2 3/4 cups Take Two Original Barleymilk
• 2 tsp white or apple cider vinegar
• 2/3 cup coconut oil, melted (or sub avocado oil)
• 2 tsp pure vanilla extract
• ½ large ripe avocado
• 2 1/4 cups all purpose flour
• 1 1/3 cups organic cane sugar
• 1 cup unsweetened cocoa powder
• 2 tsp baking soda
• 1 tsp baking powder
• 1/4 tsp salt

Frosting Ingredients
• 1 cup softened vegan butter
• 1/2 large ripe avocado (mashed)
• 2 1/2 - 3 cups powdered sugar
• 2/3 cup unsweetened cocoa powder
• 1/4 cup melted dairy-free semisweet chocolate
• 2 tsp pure vanilla extract
• 1/4 cup Take Two Original Barleymilk

Step 1
Preheat oven to 350 degrees and coat a large rectangular pan with nonstick spray or vegan butter. 

Step 2
Put the sugar and 1/2 avocado in food processor and blend until smooth.

Step 3
Mix barleymilk and vinegar in a large mixing bowl, then set aside for a few minutes. Add the oil, and vanilla extract, then mix or process until smooth. 

Step 4
Mix the flour, sugar, cocoa powder, baking soda, baking powder, and salt, then add to the wet mixture. Beat mixture until smooth, taste and adjust based on desired sweetness.

Step 5
Pour batter into cake pan and bake until a toothpick inserted into the center comes out clean (30 - 40 minutes). 

Step 6
While cake is cooling, prepare frosting by mixing together all ingredients until smooth.

Step 7
Then add powdered sugar until frosting reaches your desired consistency and sweetened (Add more barleymilk if it becomes too thick).

Step 8
After the cake cools, frost it and enjoy!
