Take Two Carrot Cake Pancakes

If you love carrot cake, then these fluffy, vegan carrot cake pancakes are perfect for you! They're made easily, in one bowl, with simple, healthy ingredients that you likely already have in your kitchen. It’s seriously like having healthy cake for breakfast! And what’s better than that?


Take Two Carrot Cake Pancakes

Prep Time: 10 minutes
Cook Time: 15 minutes

• 2 flax eggs (2 tbsp flaxseed meal + 5 tbsp water)
• 1 ripe banana, mashed
• ½ cup Unsweetened Barleymilk
• 1 ½ tsp vanilla extract
• 1 tbsp pure maple syrup
• 1 ¼ cup oat flour
• 2 ½ tsp baking powder
• 1 tsp ground cinnamon
• ¼ tsp nutmeg
• ¼ tsp ground ginger
• ⅛ tsp ground cloves
• ¼ tsp salt
• 1 cup shredded carrots (about 3 carrots)
• Oil of your choice, or vegan butter, for the pan or griddle

Topping Suggestions
• Toasted coconut flakes
• Vegan cream cheese frosting (4 oz vegan cream. cheese + 2 tbsp powdered sugar + 1 tbsp barleymilk)
• Walnuts or pecans
• Maple syrup

Step 1
In a large bowl, add flaxseed meal and water. Let it set for at least 5 minutes to thicken. Add the ripe banana and use a fork to mash, until it reaches a pudding-like consistency. A few small lumps are okay to leave.

Step 2
Add Unsweetened Barleymilk, vanilla extract, and maple syrup. Whisk until combined. Now, you can add the oat flour, baking powder, spices, and salt. Whisk again until combined. Take notice of how the batter looks: if it’s too dry or runny, add either a touch more barleymilk or oat flower to adjust consistency. It should be a thick, yet pourable batter.

Step 3
Using a grater, shred carrots as fine or as chunky as you’d like. Add to batter.

Step 4
Heat a pan or griddle over medium heat. Coat lightly with oil or vegan butter, if needed.  Scoop the batter using a 1/4 cup for each pancake, and add to the pan. Use the back of a spoon to spread the batter out into larger circles.

Step 5

Cook for 2-4 minutes, or until the pancakes slightly puff up, and you see the edges have lightly browned. Flip the pancakes, and cook until golden brown.

Step 6
Serve immediately, topped with vegan cream cheese frosting and coconut flakes — or toppings of your choice — and enjoy.
